We all have our favorite things… our go-to’s. From ‘skinny’ jeans, to never fail concealers, the perfect shade of lipgloss, to those heels that make our legs look lusciously long. But I think it’s also important to have a staple in the kitchen, the dish you can whip up when you need to be impressive at a moments notice! 
A few years ago I got this Jamie Oliver recipe from a friend, it was the first meal I ever made for Chris (don’t they say the way to a man’s heart is through his stomach?) and he’s still here… so it obviously works!
Because it’s the first thing I ever cooked for Chris, it’s one of those special things for us. Yesterday, to celebrate Valentine’s Day, I planned a night in with three course dinner, delicious wine, a great dvd and no mobile phones! We both said this morning what a lovely night it was – and how much we enjoyed just spending quality time together. It always amazes me how food can conjure so many memories, remind us of something special and take us back to a moment in time. I’d love to share with you one of the dishes that does this for me, it’s also super delish and easy to make – so I hope you enjoy trying it too!
Our Valentine’s Day dinner last night
450g spaghetti or fettuccine
2 red chillies, finely chopped
2 garlic cloves, peeled and finely chopped
500g peeled raw prawns
270g sun-dried tomatoes blitzed in a blender
2 lemons (juice, zest and wedge)
1 small glass white wine
2 handfuls of rocket
Freshly ground black pepper
Extra virgin olive oil
Sea salt

To start, boil the water and begin cooking 450g of spaghetti in salted boiling water. 
While your pasta is cooking, heat some extra virgin olive oil in a large frying pan and add the garlic and chilli. Just as the garlic begins to brown, add the prawns and sauté them for a minute. Add the small glass of white wine and sun-dried tomato purée, then simmer for a few minutes. Finally, add a generous squeeze of lemon juice, a little salt and some pepper.
When the pasta is ready, drain it in a colander.
You can choose to toss the spaghetti with the sauce, or I plate the pasta with the sauce on top. To garnish, add some rocket leaves, grated lemon zest and a lemon wedge on the side.
Serve and enjoy!
