I’m excited to announce today marks the start of a new series on Style Elixir. Each week I’ll be creating my favorite healthy and delicious recipes… and the best part is, they’re all going to be really easy for you to make!
For my fellow chocolate lovers, we’re kicking things off with a seriously good raw food recipe… these indulgent sugar-free, guilt-free Salted Chocolate Truffles. They are sooo good, plus ridiculously quick and simple. Enjoy! Oh and if you have any questions, just leave a comment and I’ll reply.
Total Time: 10 minutes
Equipment: Food processor (I use this Cuisinart Mini Food Processor, it’s small but so powerful… and on sale for under $35!)
Servings: 8 – 10 (depending on the size you make)
Walnuts – 1/2 cup
Sunflower Seeds – 1/2 cup
Dates – 1/2 cup
Raw Cocoa Powder – 4 tablespoons
Sea Salt – 1/4 teaspoon (you can add more to taste)
1. Measure out your ingredients for the walnuts (1/2 cup) and sunflower seeds (1/2 cup), then place these in the food processor and chop until blended. Don’t over-process them, once they are a fine consistency and well blended you can stop (don’t have them become too powdery or soft).
2. Once the walnuts and sunflower seeds are processed, measure and add the dates (1/2 cup), sea salt (1/4 teaspoon) and cocoa powder (4 tablespoons). Process this until the consistency starts to become sticky and the mixture is well combined together. At this point, do a little taste test and add more salt or if extra sweetness is needed, add a couple more dates and process again until combined.
3. Now it’s time to start to assemble your truffles! Take a palm size amount of the mixture and roll it in your hand to form a ball. Repeat until all the mixture has been used. I added Goji berries to garnish and give a perfect pop of color. Alternatively you can also roll them in cocoa powder (however I prefer to leave them as is without this). Voila! Serve and enjoy.
