We’re all so busy and it can be hard sometimes to think of what you can eat that’s quick, healthy and delicious… so today, I wanted to share one of my all time favorites, the perfect healthy snack – Avocado, Tomato and Goats Cheese on Toast. It’s my go-to when I’m super hungry (but don’t want to be naughty) and the best thing is you can enjoy it any time of day!
I am obsessed with it for breakfast (delightful with the addition of a poached egg), but also reach for it during the day and occasionally for dinner (when Chris is away on work, I know it sounds bad, but I rarely make the effort to cook a proper dinner if it’s just me). This is quick, easy and delicious! What’s your go-to snack?
– Avocado, Tomato and Goats Cheese on Toast
Bread (grain or wholemeal is the healthiest choice)
Salt and Pepper to taste
Garnish with a little balsamic vinegar glaze and wedge of lemon
